Papaya BLT
Grab your attention salads? Solo papayas were made for the occasion. Make it a salad that in another life is a popular sandwich. This can be a side salad using prepared bacon bits or an entree with cooked bacon to top it.
Ingredients
- Solo papaya - 1
- Bacon bits or bacon - 1 tbs or 2 slices
- Cherry tomatoes, cut in half - 3
- Ginger, fresh - 1/2 inch
- Lime - 1
- Vanilla yogurt or extra virgin olive oil - 2 tbs
- Boston lettuce - 2 leaves
Instructions
- Slice the Solo papaya in half, remove the seeds. Scoop the orange flesh out and cut into small pieces. Add to a medium-sized bowl. Reserve the skins for serving.
- Bacon options:
- Add bacon bits to the medium bowl OR
- Bake or fry 2 slices of bacon. Tear or chop up the bacon into small pieces. Add to the medium bowl. Reserve 1/2 tsp of the grease for the dressing. Let the grease cool.
- Cut the cherry tomatoes in half. Add to the medium bowl. Toss gently.
- With a spoon or veggie peeler, peel the ginger. Grate into a small bowl.
- Slice 2 rounds off of the lime. Juice the remaining lime in the small bowl.
- To the small bowl, add the yogurt or olive oil and bacon grease. Whisk together.
- Add the ginger mixture to the papaya bowl. Toss gently to coat. Cover and refrigerate at least 2 hours.
- To serve, place the lettuce in the Solo half. Toss the papaya mixture gently to coat, and then scoop the papaya mixture into the Solo halves. Slice the remaining lime into slices.
