Caribbean chicken
This is a quick dish to prepare, but so delish it will be hard to forget. A great way to make chicken and even turkey leftovers work delicious.
Ingredients
- 2 tbs olive oil
- 1 small red onion, diced
- 1 clove garlic, minced
- 1" fresh ginger, minced
- 2 tsp cumin
- 2 tsp coriander
- 1 tbs maple syrup
- 1 tsp paprika
- 8 oz precooked boneless, skinless chicken, cut into 1" chunks or leftover turkey
- 1 cup yogurt
- 1 Caribbean Red® papaya (about 2 lbs, without seeds), peeled and chopped into 1" chunks
Instructions

Place the oil in a large skillet over medium-high heat and heat for 3 minutes. Add the onion, garlic and ginger, and cook about 4 minutes.

Add the cumin, coriander, maple syrup and paprika. Stir to combine. Add the chicken pieces and papaya, and cook for 15 minutes.

Add the yogurt and stir to combine. Toss to coat. Cook an additional 5 minutes.

Serve warm over rice.
