Caribbean garlic shrimp
Quick and easy, nice and breezy my Jamaican papaya grower likes to say. Combining two Caribbean favorites, papaya and shrimp, can put you in the tropics for dinner even theres no ocean in sight.
Ingredients
- ½ Caribbean Red papaya, about 2 cups
- 4 tbs butter
- 2 cloves garlic, minced
- 1 cup red onion, chopped
- 2 sprigs thyme
- 1 lb medium pre-cooked shrimp, shelled, deveined
- 3 cups packed lettuce, your choice
- Optional: ¼ cup cocktail sauce
Instructions

Peel the Caribbean Red papaya and cut in half, remove the seeds. Cut into small pieces.

In a large skillet over medium-high heat, melt the butter.

Add the garlic and onion. Sautée for 3 minutes.

Add the papaya pieces, thyme and shrimp. Stir to combine then reduce heat to low. Cook covered for another 5 to 7 minutes, stirring occasionally.

Serve over lettuce with cocktail sauce on the side.
