Caribbean papaya bars
When baked, Caribbean Red® papayas will remind you of pumpkin. Remind you of, not replace. This papaya will be naturally sweeter, so add sugar according to your own taste. Easy-to-make crowd-pleaser.
Ingredients
- nonfat cooking spray
- 3/4 cup flour
- 1/4 tsp salt
- 2 tbs light brown sugar
- 1/2 stick unsalted butter
- 1/2 cup sugar (optional)
- 2 tbs flour
- 1/4 tsp salt
- 1/2 Caribbean Red papaya (without seeds), peeled and puréed
- 2 eggs
- 2 limes
- 2 tbs honey
- 2 tbs powdered sugar
Instructions

Preheat the oven to 350°.

Spray a 9x12 baking dish with cooking spray.

Place the flour, salt, brown sugar and butter in a food processor. Pulse until the combination has a coarse texture.

Press the mixture evenly into the baking dish. Bake 15 minutes.

In a medium bowl, place the sugar, flour and salt. Stir to combine. Add the papaya purée, eggs, the juice of 2 limes and honey. Stir until relatively smooth.

Pour the papaya mixture over the crust. Bake 20 minutes. The papaya filling should appear set.
