Caribbean Red Papaya Dessert Topping
If you don't want to go cold turkey into a fruit as a dessert, try it in a topping for a baked treat. You may find that you'll go without the cake the next time.
Ingredients
- heavy cream - 1 cup
- cream of tartar - 1/2 tsp
- vanilla extract - 1 tsp
- Caribbean Red papaya - 1/2
Instructions
- In a large bowl, using a mixer, whip heavy cream, cream of tartar and vanilla until soft peaks form.
- Cut open a Caribbean Red papaya, discard the seeds and chop in half. Refrigerate half for later use.
- Cut the remaining papaya into large pieces. Divide in 2. Put half of the pieces aside. Add the other half to a food processor. Pulse until the papaya is pureed. Fold the puree in with the whipped cream mixture. Fold the papaya pieces into the mixture as well.
- Served chilled on top of a baked treat or serve as a separate dish.
