Chunky Caribbean salad
Make it summer anywhere you live by enjoying tropical fruits. It means some exotic tastes can come together for a great dinner salad. This entrée can be tossed with just two fruit, three fruit or them all. Whatever you've got in the kitchen fruit bowl.
Ingredients
- 3 limes
- 2 tbs olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp chili powder
- 1 tsp garlic minced
- 1 tsp ground cumin
- 1 5 oz pkg. tuna fish
- 1 dragonfruit
- 1 SlimCado® avocado
- 2 red guava
- 1/4 cup fresh culantro or cilantro, chopped
- 4 cups romaine lettuce
Instructions

In a small bowl, combine the juice of 3 limes, olive oil, pepper, chili powder, garlic, cumin. Whisk to combine.

In a large bowl, add the tuna fish. Separate into bite-sized chunks. Add the culantro.

Slice open a SlimCado avocado. Discard the seed and scoop out the avocado. Chop into small pieces. Add to the large bowl.

Cut open a dragonfruit. Scoop out the white and black dotted interior. Chop into small pieces. Add to the large bowl.

Peel the red guava. Cut in half, scoop out the seeded interior. Chop the exterior into small pieces. Add to the large bowl.

Add the lime mixture to the large bowl. Toss gently to coat.

To serve, divvy up the lettuce between individual plates or bread for sandwiches. Scoop the Caribbean mixture on top of the lettuce.
