Colors of the season soup with grilled cheese cubes
A creamy soup made with papaya dominates this soup-and-sandwich combo. This recipe serves 8. If you're not expecting a crowd, don't worry the soup easily stores refrigerated for up to a week. Serve it chilled or warm. Make the grilled cheese cubes just before serving.
Ingredients
- 1 Caribbean Red papaya, just ripe (just about 50% yellow, and gives to a gentle squeeze)
- 2 tbs butter
- 2 cloves garlic, peeled
- 1 medium-sized onion, chopped roughly
- 1 1/2 cup vegetable broth
- 1/2 cup heavy cream
- 2 tbs honey
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- Grilled cheese cubes
- 4 tbs butter
- 8 slices white bread
- 8 slices cheddar cheese
- 1/4 cup sour cream

Peel the Caribbean Red papaya and cut in half, remove the seeds. Cut into large pieces and add to the food processor.

In a large pot over medium heat, melt 2 tbs of the butter. Add the garlic and onions and saute for 3 to 4 minutes. Add the garlic and the onions to the food processor with the papaya. Pulse until relatively smooth.

While the food processor operates, add the broth, heavy cream, honey, salt and pepper to the pot. When ready, add the papaya and garlic mixture to the pot.

Bring to a boil, then reduce heat and simmer covered for 10 minutes. Stir occasionally. Enjoy hot or cold. For the chilled option, refrigerate covered for up to a week.

Just before serving, hot or cold, place a skillet over medium heat and melt 4 tbs of butter.

Using a pastry brush, spread one side of each piece of bread with the melted butter. Place 2 slices of bread butter side down in the skillet. Top with 2 layers of cheese and cover each slice with the remaining bread slices. Cook until golden brown on each side. Repeat to make 4 sandwiches.

Remove grilled cheese sandwiches to a cutting board and cut each sandwich into 8 cubes.

Divide the papaya soup into bowls, top with a dollop of sour cream and a square of grilled cheese. Divide the remaining grilled cheese cubes and top soup or serve on the side. Serve immediately.
