Creamily Topped Caribbean Red Papaya
Fruit for dessert? Everyone knows that's the way to go. Here's a topping for our papayas that'll help lead people down a healthy path. Plus it's an easy fix.
- Cut a Caribbean Red papaya in half and discard the seeds. Refrigerate half of the papaya for later use. Slice the remaining papaya half into wedges. Cut up one wedge into small pieces for a garnish.
- In a large bowl, using a mixer on low speed, beat cream cheese until fluffy. Add the honey and olive oil and combine.
- Place wedges on individual plates. Top with the cream cheese topping. Sprinkle the small papaya pieces on top.
