Dilled Boniato soup
Boniato has a nutty taste. When cooked, there's no need for butter. That's how nutty-tasting it is. So a soup made out of Boniato is a big plus. Not that hard to make oh so delicious soup, perfect for cooler temps. But wait, in the tropics, this soup is enjoyed year-round. That's how good it is.
Ingredients
- 1 large boniato, peeled and cubed
- 1/4 cup butter
- 1 cup coarsely chopped onion
- 1 clove chopped garlic
- 1 cup plain yogurt
- 1 cup skim milk
- 2 spring onions
- 1/2 cup chopped fresh parsley
- 1 tbs dried dill
Instructions

Place boniato in a saucepan, cover with water and cook until tender.

Drain liquid, add butter, onion and garlic.

Sauté until onion is clear and wilted.

Stir in yogurt and skim milk and heat until warm.

Add spring onion, parsley, and dill and heat to serving temperature.
