Dragon’s fruit salad
A simple recipe that simply plays up the great fruit tossed within. Both dragonfruit and starfruit play 2 roles in this recipe. Dragonfruit is both an ingredient and the bowl, starfruit both ingredient and garnish.
Ingredients
- Fruit salad
- Your choice of fruit, chopped into small pieces - 1 cup
- Starfruit - 1
- Dragonfruit, red or white - 1
- Dressing
- Any fruit juice available after slicing - up to 1 tbs
- Honey - 1 tbs
- Lime - 1
- Fresh ginger, minced - 1

Cut the dragonfruit in half lengthwise. Scoop out the insides. Slice into small cubes. Add to a large bowl with any juice. Reserve the skin for bowls.

Trim the edges of a starfruit with a veggie peeler. Slice into 1/2" wide stars. Discard any seeds. Add to the bowl with any juice.

Add the remaining chopped fruit. Toss gently to mix. Drain any juice. Add 1 tbs of the drained juice into a small bowl.

In the small bowl, add the honey, juice of one lime and ginger. Stir to combine.

Add the dressing to the fruit bowl. Toss gently. Cover with plastic and refrigerate at least 2 hours.

Serve chilled in dragonfruit bowls, pulling some starfruit slices to the top for star appeal.
