Fall’s harvest salad
Fall's harvest includes pecans, cranberries, and Caribbean Red papayas. We harvest papayas in the fall! The papaya adds a tropical touch to this easy-make salad that borders on comfort food for the health-conscious.
Ingredients
- 2 cups Caribbean Red papaya (about ½ fruit)
- ½ cup dried cranberries
- ½ cup gorgonzola cheese crumbles
- 1/2 cup pecans, chopped
- ½ cup Italian dressing
Instructions

Peel the Caribbean Red papaya and cut in half, remove the seeds. Cut into small pieces.

In a large bowl, add the papaya pieces, cranberries, cheese, and pecans. Toss to combine. Chill for at least 2 hours.

Just before serving, add the Italian dressing and toss gently to combine.
