Mummy Yummy Starfruit
Topping a steak just off the grill with the starfruit coconut topping has always been a treat. Around Halloween, dressing up a starfruit slice as a mummy makes it the talk of the meal.
- 1 lime
- 1 tsp honey
- 1/4 Groovy Coconut®
- 2 Florida starfruit
- 2 papaya seeds or something resembling mummy eyes
Follow the instructions for extracting the white meat of the Groovy Coconut. After shaving off the brown skin, clean the cutting board and then shave the coconut in 1" long pieces. Scoop into a large bowl.
Trim the ribs of the starfruit with a vegetable peeler. Slice one thick slice, then cut the remainder into thin slices. With a small paring knife, poke out the seeds. Place slices into the large bowl.
Using the starfruit thick slice, fashion coconut shavings around it to resemble a mummy. Add eyes for effect. Wrap with plastic wrap and chill.
In a small bowl, whisk together the lime and honey. Pour over the starfruit and coconut and toss to coat. Cover and chill for at least 2 hours.
To serve, toss one more time to coat.
