Papaya Yogurt Salad
Didn't want to call it a parfait because yogurt parfaits found in stores use sugary jams to make the dish taste sweet. Fresh papaya and strawberries need no help to do it on their own.
Ingredients
- 2 Solo papayas
- 1 cup fat-free plain yogurt
- 1/4 cup chopped walnuts
- 1/4 cup raisins
- 1 cup chopped fresh strawberries
- 3 tbs honey
Instructions

Cut the solo papayas in half lengthwise. Scoop out the seeds. Scoop out the flesh and chop into cubes. Put the solo papaya shells on a serving tray (deviled eggs plate works well to keep them in place).

In a large bowl, gently combine the solo papaya cubes, yogurt, walnuts, raisins and strawberries.

Scoop into the papaya shells. Drizzle with honey.
