Potato SlimCado salad
Answer the question of what to bring to the family reunion, the church social or the tailgating party with this quick-and-easy potato SlimCado salad. No one will guess it's quick or easy.
Ingredients
- small red potatoes - 28 oz. package
- limes - 2
- passionfruit - 2
- garlic, minced - 1 clove
- chives, chopped - 1/4 cup
- vanilla Greek yogurt - 1/4 cup
- apple cider vinegar - 2 tbs
- red onion - 8 oz. chopped
- salt and pepper - 1 tsp each
- SlimCado avocado, cut in half, seed discarded, peeled - 1
Instructions
- Cook the potatoes as directed on the package. Drain and let cool.
- Cut the passionfruit in half and scoop out the interior. Add to a large bowl along with the juice of two limes, garlic, chives, yogurt, vinegar, onion, salt and pepper.
- Chop the SlimCado into bite-sized pieces and add to the bowl. Toss gently.
- Slice the potatoes in quarters. Add to the bowl and toss gently to combine. Refrigerate 2 hours with plastic touching the surface. Serve chilled.
