Red guava salad dressing
Guava - not cherries, not strawberries, not raspberries - is the go-to sweet for Latino pastries. But you wouldn't make salad dressing out of cherries and strawberries (raspberry vinaigrette, yes). Red guava's tropical not-too-sweet sweetness adds a nice touch to almost any lettuce you put under this tropical dressing.
Ingredients
- red guavas - 4
- sugar - 1/2 tbs
- dry sherry - 1/2 tbs
Instructions
- Peel the guava, and cut off the ends. Chop into small pieces.
- In a large saucepan over medium heat, combine the sherry and sugar. Stir to dissolve sugar completely.
- Add the guava pieces in the saucepan. Turn the heat down to low. Stir often for 20 minutes.
- Transfer to a food processor. Purée. Force the guava mixture through a sieve. Discard the seeds. Serve immediately. If serving cold, scoop into a sealable container and refrigerate up to 1 week.
