SlimCado red pepper
Heating an avocado makes a side dish worthy of any beef entrée. Just take a few minutes to heat some garlic and onion to add to it. Adding another veggie like red pepper simply adds some crunch.
Ingredients
- 2 tbs vegetable oil
- 1 lime
- 1 clove garlic, minced
- 1/4 cup red onion, chopped
- 1 red pepper
- 1 SlimCado® avocado
Instructions

In a medium saucepan over medium heat, heat the oil for 3 minutes.

Add the juice of one lime and the garlic and onion, and cook for 3 minutes or until the onion softens.

Slice the red pepper into thin strips, discarding the seeds and stem.

Add the pepper to the saucepan; cook for 2 minutes.

Slice open a SlimCado avocado, discard the seed and scoop out the insides. Chop into bite-sized pieces or mash.

Add the SlimCado (mashed or pieces) to the saucepan. Stir to combine. Cook an additional 3 minutes.

Serve warm.
