Solo Mango Tango
Papaya, with its high level of vitamin C and heart-healthy potassium, is the star of this fruit salad. And it brings its own bowl to the table.
Ingredients
- 2 Solo papayas
- 2 mangos, peeled and diced into 1-inch chunks
- 1 honeydew melon, peeled, seeded, diced into 1 inch chunks
- 1 tbsp sugar
- 1 tbsp Grand Marnier
- 7 oz each greek yogurt
- 1/4 cup fresh-squeezed orange juice
- 1/4 tsp vanilla extract
- 1 tbsp honey
- Mint sprig for garnish
Instructions

Cut the solo papayas in half vertically. Scoop out the flesh and cut into 1" chunks.

In a medium bowl, whisk together the yogurt, orange juice, vanilla and honey. Refrigerate until ready to use.

In a large bowl, carefully toss together the papaya, mangos, melon, sugar and Grand Marnier.

Just before serving, toss the dressing with the fruit chunks, scoop fruit into individual bowls, and garnish with a sprig of mint.
