Starfruit ginger oatmeal overnighter
Combine, stir and refrigerate the ingredients at night, and enjoy this the next day. It's as simple as that. Stir in some star fruit, coconut and fresh ginger before the oatmeal hits the refrigerator, and you've got oatmeal with a great light tropical taste.
Ingredients
- 1 Florida starfruit
- 1/2" fresh ginger
- 1/4 cup fresh Groovy Coconut, shredded
- 2/3 cup regular rolled oats
- 1/4 cup almond milk
- 5 or 6 oz. low-fat vanilla Greek yogurt
- 1 tbs. brown sugar
- 2 pieces of crystallized ginger

With a vegetable peeler, trim the ribs off the star fruit. Cut into star-shaped slices, and poke out the seeds. Reserve 2 star slices (wrap in plastic and refrigerate). Chop the remaining star slices into small pieces.

Peel the skin off a 1/2" piece of fresh ginger. Grate into fine pieces.

Place the ginger, oats, yogurt, almond milk and brown sugar in a medium bowl. Add the star fruit pieces, and stir gently to combine.

Cover the bowl with plastic wrap, or scoop the oatmeal mixture into a 1-pint jar and put the lid on.

Refrigerate at least 8 hours.

Stir before serving. To serve, scoop the oatmeal into 2 bowls and top with the star slices and crystallized ginger.
