Honey papayas
Caribbean Reds are versatile. They can be topped with a savory or sweet sauce, or the papayas themselves can act as the topping. Honey papayas score big over pork or poultry.
Ingredients
- Caribbean Red papaya - 1/2
- Butter - 2 tbs
- Limes - 2
- Honey - 2 tbs
- Hazelnuts, coarsely chopped - 2 tbs
Instructions
- Cut off the bottom of the Caribbean Red papaya. Stand it up and peel, using a knife with downward strokes. With a large spoon scoop the seeds out of the bottom. Cut into 1" horizontal slices, then into quarters.
- In a medium saucepan over medium-high heat, melt the butter. Add the papaya, lime juice and honey.
- Bring to a slow boil, then reduce heat and simmer for 3 minutes.Serving options:
a. Serve immediately by scooping the honey papaya mixture over the pork or poultry just before serving. Top with hazelnuts.
b. Honey papaya can also be refrigerated. Toss to cover, and reheat in the microwave for 2 minutes on medium power (or until warm).
