Starfruit slices can top almost any pie. Cream pies sparkle with them.
- 1 cup sour cream
- 1/2 cup granulated sugar
- 1/2 cup flour
- 1 tsp vanilla
- 1 egg, beaten
- 2 Florida starfruit
- 1 prepared graham cracker crust
Preheat oven to 350°F.
In a large bowl, use a pastry cutter to combine the sour cream, sugar, flour, vanilla and egg.
With a vegetable peeler, take the brown tips off the points of the starfruit. Slice the starfruit into thin slices. Poke out any seeds with a knife.
Pour the sour cream mixture into the graham cracker piecrust. On top of the filling, arrange starfruit slices point to point around the pie's circumference. Add one slice to the middle.
Bake pie 40 to 50 minutes. After 30 minutes of baking, you may want to cover the pie with foil to prevent excessive browning.
Cool at least 30 minutes before serving.
