Caribbean Red snack treats

Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup light brown sugar (packed)
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups rolled oats
- 1 stick of butter, at room temperature
- 1/2 Caribbean Red papaya, peeled, seeds removed and chopped
- 1/4 cup Groovy Coconut, shredded

Preheat the oven to 350°.

Spray a 9"x13" pan with nonfat cooking spray.

In a large bowl, stir together the flour, brown sugar, baking soda, salt and rolled oats.

Add the butter. With a potato masher, cut it into the flour mixture until crumbly.

Press about 3/4 of the mixture into the prepared pan. Spread the chopped guava over the crumble mixture. Sprinkle the remaining mixture over the guava pieces.

Bake for 35-40 minutes, or until crust is lightly browned. Add shredded coconut to the top for the last 10 minutes of baking.

Allow to cool. Cut into slices.
