Caribbean breeze fruit salad
Almost any combination of tropical fruit will make this salad a star. The fruit and the cream of coconut are sweet, so try the dressing before adding any additional sugar.
- 1/8 cup coconut cream
- 1 lime
- 1 tbs sugar (optional)
- 1 red guava, peeled and chopped; cut out center seed
- 1 Florida starfruit, sliced; trim off tips and discard seeds
- 1 banana, sliced
- 1 cup Caribbean Red® papaya (about 1/4 of a fruit), peeled and chopped; discard seeds
Place the coconut cream, the juice of one lime and sugar in a container with a lid. Shake to combine. Put aside until ready to serve.
In a large bowl, combine the guava, starfruit, banana and papaya pieces. Toss gently.
Just before serving, add the dressing and toss gently.
