Caribbean Red Thumbprint Cookies
Use your favorite sugar cookie recipe or make it simple with refrigerated cookie dough. It'll be the fruit thumbprint that's the showstopper.
Ingredients
- Filling
- 1 cup Caribbean Red® papaya, chopped
- 1/2 cup strawberry jam
- Cookies:
- 1 roll of refrigerated cookie dough (or your own sugar cookie recipe)
- 1/4 cup shredded Groovy Coconut
Instructions

Puree papaya and strawberry jam together in a blender or food processor.

Preheat the oven as suggested on the cookie dough package.

Dust the rolling surface and the rolling pin with flour. Roll out the refrigerated cookie dough to the thickness suggested by the package for cutting.

Using small cookie cutters (cookie dough will spread) or a small-diameter glass, cut out individual cookies and place on a cookie sheet; check cookie dough instructions to see whether cooking spray is required on cookie sheets.

Using a clean thumb (offering potential for kid activity) or a clean spoon, make a depression in the middle of the cookie. Add a dollop of papaya/strawberry topping in the depression.

Bake as instructed on the cookie dough package. For a toasted treat, add shredded coconut to the top of the cookies for the last 2 minutes of baking.
