Syrup breathing dragon
Fun name for a simple syrup that can top pancakes or waffles. But don't stop there. Make that store bought angel food cake a blast, a dragonfruit blast. And while you're at it, top that fro-yo with a blast of dragonfruit syrup. Simple to make, tops just about everything, and stores in the refrigerator for quick access.
Ingredients
- Dragonfruit, red or white - 2
- Lime - 1
- Brown sugar - 1/2 cup
- All spice - 2 tsp
- Water - 6 cups
- Cinnamon sticks - 3
- Ginger, fresh - 2
Instructions

Slice the dragonfruit in half. Scoop out the flesh and slice into cubes.

Slice the ginger into very thin slices.

In a large saucepan over medium heat combine the juice of one lime, brown sugar, allspice and water. Add the cinnamon sticks and ginger.

Bring to a boil, reduce to a simmer. Simmer until the liquid has reduced to half.

Remove the ginger and cinnamon sticks.

Remove from heat, let cool. Refrigerate covered for at least 2 hours.
