Starfruit onion pickle
No need for canning; just let set in the refrigerator 2 hours. After that, serve chilled or sautéed. A great appetizer or side dish for the main meal. Easily freezes for future meals; just leave 1" empty space at the top of the freezer container for expansion.
Ingredients
- 2 cups white vinegar
- 2 tsp salt
- 2 cups sugar
- 1 lb Florida starfruit, ribs trimmed with a veggie peeler, fruit sliced into stars, seeds discarded.
- 1 medium yellow onion, sliced into thin rings
Instructions

In a medium bowl, combine the vinegar, salt and sugar.

In a resealable container (about 20 oz.), place the starfruit slices and onion rings. Add the vinegar mixture. Seal the container, toss to coat.

Refrigerate for at least 2 hours.

Serve chilled or sautéed with 2 tbs. of oil.
