Caribbean cranberry sauce
An exotic take on cranberry sauce with passionfruit and Caribbean Red® papaya brings cranberries into the tropics. It's a cranberry sauce that needs to top nothing. It can stand on its own but still make an awesome sauce for turkey sandwiches. When cooked, passionfruit seeds add a nice crunch.
Ingredients
- 1 tbs olive oil
- 1" fresh ginger, minced
- 1 cup orange juice
- 1 cup sugar
- 1 pkg(12 oz.) fresh cranberries
- 1/2 Caribbean Red papaya, peeled and chopped into small pieces, seeds discarded
- 2 Florida passionfruit
- 1 lime
- 1/2 tsp ground cloves

In a large wok over medium-high heat, combine the olive oil and ginger. Heat for 3 minutes.

Add the orange juice and sugar. Stir to dissolve the sugar. Add the cranberries; bring to a boil. Continue to boil until most of the berries pop, about 10 minutes.

Add the Caribbean Red papaya, the pulp and seeds of the passionfruit, the juice of one lime, and ground cloves. Mix well. Cook 10 minutes. Remove from heat.

Scoop into a medium-size bowl. Cover and cool. Then refrigerate for at least 2 hours.
