Tropical Hummus
Hummus made in the Caribbean has to have some papaya in it. It's a matter of East meets the West Indies. And yes, I'm cheating by adding the Italian dressing seasoning packet instead of the herbs and spices.
Ingredients
- 1/4 Caribbean Red papaya (about 1 cup chopped)
- 1" fresh ginger
- 1 15 oz. can chickpeas, drained
- 1 clove garlic
- 1 tbs tahini
- 1.6 oz. pkt dried Italian dressing seasoning
- 1/4 cup fresh cilantro, chopped
- Crackers to serve
Instructions

Peel the Caribbean Red papaya. Discard the seeds. Cut half into large pieces. Add to a food processor.

Peel 1" of ginger and add to the food processor.

Add the chickpeas, garlic, tahini and Italian dressing seasoning to the food processor. Pulse until smooth.

Serve topped with cilantro. Give your dines crackers to dip.
