Swedish papaya soup
Do Swedes make soup out of papaya? Generally no, but they do make soups with their beloved berries. My Swedish grandfather, who emigrated to the tropics, would like this adaptation.
Ingredients
- Caribbean Red papaya - 1
- sugar - 1/4 cup
- cinnamon - 2 sticks
- lime - 1
- cornstarch - 1 tbs
- salt - pinch
Instructions
- Peel and remove the seeds of a Caribbean Red papaya. Cut into large pieces that fit into a food processor. Add to the processor. Pulse until relatively smooth.
- In a medium saucepan over medium-high heat, add the pureed papaya and bring to a boil. Reduce the heat to medium.
- Add the sugar, cinnamon sticks, juice of one lime and 1 tsp of lime zest. Bring to a boil.
- In a small bowl using a whisk, thoroughly combine the cornstarch and 2 tbs water. Add about 1/4 cup of the papaya soup and whisk together. Add the cornstarch mixture to the saucepan and stir to combine.
- Stir until the soup thickens, about 3 to 5 minutes.
- Salt to taste. Serve immediately.
