Solo and lime ice
Blender recipes are so easy. Perfect for warm days when you're trying to limit your kitchen time. So limit that kitchen time and sit out on the patio to happily enjoy this lime and papaya concoction.
- 2 Solo papayas or 1/4 cup Caribbean Red® papaya (about 1 cup chopped)
- 6 small or 3 large limes (1/2 cup lime juice)
- 1/8 cup sugar
- 1 cup ice
- 1/4 cup mint leaves
- 1 lime for garnish
Slice the Solo papayas in half; scoop out the seeds and discard. Then scoop out the orange flesh. Cut into large pieces. Add to a blender.
Add to the blender the juice of the limes, sugar and ice. Blend until relatively smooth. Add the mint and pulse until the mint is chopped.
Serve immediately with a slice of lime.
