Baked Solo papaya with lime sauce
Simply savory, it's dessert at my house. At your house, you may need to start it as a side dish if your family frets about having fruit for dessert.
Ingredients
- 2 tbs unsalted butter
- nonfat cooking spray
- 2 Solo papayas (without seeds), cut in half
- 2 limes
- 2 tbs brown sugar
- 1 tsp cinnamon
- 1/2 cup Greek yogurt, plain or vanilla flavor
Instructions

Preheat the oven to 350°.

Melt the butter in a small bowl.

Spray a 9x12 rectangular baking dish with cooking spray.

Arrange the papaya halves side by side, cut sides up, in the baking dish.

Add the juice of 1 lime, brown sugar and cinnamon to the butter in the bowl. Stir until the sugar is dissolved.

With a pastry brush, brush the tops of the Solo papayas with the butter mixture.

Slice the second lime into wedges. Place along the sides of the papayas in the baking dish.

Bake for 15 minutes. You should be able to insert a fork in one of the papayas.

Remove from the oven and arrange on a serving platter. Serve with a dollop of yogurt in the seed cavity and a heated lime wedge on the side.
