Banana rum starfruit syrup
Breakfast and brunch are givens. But think dessert as my parents did when hosting the Redland gourmet club. Yes, even farmers like to gather together and eat "gourmet."
Ingredients
- 2 medium-sized Florida starfruit
- 3 tbs butter
- 1/4 cup brown sugar
- 2 bananas, chopped
- 3 tbs rum
- 4 toaster-ready waffles
Instructions

. With a vegetable peeler, trim the points of the starfruit. Slice into thin slices, discarding the seeds. Reserve 4 slices. Chop the remaining slices.

In a large frying pan over medium-high heat, melt the butter. Add the brown sugar.

Add the chopped starfruit and bananas to the frying pan and stir occasionally for 1 to 2 minutes.

Remove the pan from the heat and add the rum. Return the pan to the heat and simmer for 3 to 4 minutes.

Serve warm, topping waffles, pancakes or French toast. Add one of the starfruit slices on the top as garnish.
