Calabaza pie
You know how you have trouble telling a pumpkin pie from a sweet potato pie? Well, you won't have that trouble with calabaza pie. You'll know it's different, and chances are you'll like it better. To boot, it has fewer calories (calabaza only has 40 calories per cup).
Ingredients
- 1 egg
- 1 1/2 lbs or 2 1/4 cups of baked calabaza
- 1 can condensed milk
- 1/2 tsp ground cloves
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp allspice
- 1/4 tsp ginger
- 1/2 tsp salt
- non-fat cooking spray
- 1 ready-to-bake piecrust
Instructions

Preheat oven to 350°.

In a small bowl, whisk the egg.

Puree the calabaza, egg and condensed milk in a food processor. Add the spices.

Spray a 9" pie baking dish with cooking spray. Arrange the piecrust in the pan. Pour the calabaza mixture into the baking dish.

Bake approximately 1 hour or until the center is firm.
