Calabaza granola
You get a lot of calabaza with every pumpkin. Don't worry about using or enjoying it all. Calabaza can replace almost any pumpkin or butternut squash in a recipe. Here's an easy granola recipe perfect for munching in the car after soccer practice, karate class and cheerleading tryouts.
Ingredients
- non-fat cooking spray
- 1/2 cup calabaza purée
- 1/4 cup coconut oil
- 1/2 cup agave syrup
- 1 tsp vanilla
- 1 tsp cinnamon
- dash of salt
- 1/4 tsp ginger
- 1/4 tsp nutmeg
- 1/4 tsp ground cloves
- 3 cups old-fashioned oats
- 3/4 cup raw pumpkin seeds
- 1 cup dried cranberries
Instructions

Preheat oven to 325°.

Lightly spray a rimmed cookie sheet with cooking spray.

In a large bowl, combine the calabaza, coconut oil, syrup, vanilla, cinnamon, salt, ginger, nutmeg and cloves.

Add the oats and pumpkin seeds and stir to coat.

Spread the calabaza mixture on the bottom of the cookie sheet.

Bake 20 minutes, stirring after 10 minutes.

Remove from oven, stir in cranberries. Cool completely.
