Caribean Red papaya mousse topped with butterscotch
A light and airy mousse is given a tropical flair with this sweet tasting papaya called the Caribbean Red. Easy to make, gr8 to taste.
Ingredients
- 1/2 Caribbean Red papaya (without seeds), peeled and coarsely chopped
- 2/3 cup heavy cream
- 1 tsp vanilla extract
- 1/8 cup sugar
- 1/4 cup butterscotch sauce
- 2 tbs raisins
Instructions

Place the papaya in a blender and purée.

In a large bowl, using an electric beater, whip the cream, vanilla and sugar until stiff peaks form.

Fold the puréed papaya into the whipped cream. Cover in plastic wrap and refrigerate at least 2 hours.

Serve topped with butterscotch sauce and raisins.
