Passionfruit tropical pudding bars
Passionfruit and fresh coconut come together for a pudding bar that's sure to bring second looks. But those second looks will translate into second helpings.
Ingredients
- nonfat cooking spray
- 2/3 cup coconut milk
- 1 egg
- 1/2 stick of butter, melted
- 1 cup self-rising flour
- 1/2 cup sugar
- 1/2 cup fresh coconut, shredded
- 3 tbs sugar
- 3 tbs cornmeal, fine
- 1/2 cup milk
- 2 limes
- 3 passionfruit
Instructions

Preheat oven to 350°. Spray a 9"x12" baking dish with cooking spray.

In a large bowl, combine the coconut milk, egg and butter.

With an electric mixer on low, gradually add the flour. Once it is thoroughly mixed in, add the sugar and then the coconut.

Pour into baking dish. Sprinkle the 3 tbs. of sugar and 3 tbs. of cornmeal over the top.

In a small saucepan over medium heat, combine the milk and juice of 2 limes. Stir frequently as contents come to a boil. Remove from the heat. Add the passionfruit pulp.

Bake for 50 minutes, or until a knife inserted in the middle comes out clean.
