Coconut papaya oatmeal sleepover
Combine, stir and refrigerate the ingredients at night, and enjoy this the next day. It's as simple as that. Caribbean Red® papaya is such a big fruit that I usually have some leftover from the evening's salad to toss into this oatmeal mix. And I can always grab a handful of shredded Groovy CoconutTM from my freezer to make the dish. There are great breakfasts in your future when you treat tropicals as kitchen staples.
Ingredients
- 2/3 cup regular rolled oats
- 1/3 cup skim milk
- 5 or 6 oz low-fat coconut Greek yogurt
- 2 tbs honey
- 1 tsp cinnamon
- 1/8 cup shredded fresh Groovy Coconut
- 1/8 cup chopped Caribbean Red papaya
- 2 tbs sliced almonds
Instructions

In a pint jar, combine the oats, milk, yogurt, honey, and cinnamon. Stir. Add the Groovy Coconut and chopped Caribbean Red papaya. Stir gently to combine.

Put the jar lid on, and refrigerate for at least 8 hours.

To serve, top with almonds and a sprinkle of cinnamon.
