Solos topped with goat cheese
Goat cheese doesn't smother the great taste of Solo papayas and the sweetness of Solo papayas need the savoriness of goat cheese. Sounds like and tastes like a perfect side dish.
Ingredients
- 2 Solo papayas
- 2 tbs extra-virgin olive oil
- 1 egg
- 4 oz soft goat cheese
- 1/2 tsp each salt and pepper
- 1 tbs fresh mint, chopped
- 1 tsp chili pepper
- nonfat cooking spray
- 1 tbs sesame seeds
- 2 tbs honey
Instructions

Preheat the oven to 350°.

Cut the Solo papayas in half, discard the seeds. With a pastry brush, lightly brush each papaya's flesh with olive oil.

In a medium bowl, beat the egg. Stir in the goat cheese, salt, pepper, mint and chili pepper. Mix until well combined.

Spray a rimmed cookie sheet with cooking spray. Arrange the 4 Solo papaya halves, flesh sides up.

Divide up the goat cheese mixture between the 4 halves. Top with sesame seeds.

Bake the Solo papaya halves for 10 minutes.

Serve warm with honey drizzled over the top.
