Dragon Fruit Cauldron Salad
Dragon fruit was made for Halloween. It also makes a great serving "cauldron" if you can steady it. I used a florist wire used to stand flowers up in a vase. I suggest using one half-shell as a cauldron and scooping the remaining salad around the upstanding dragonfruit. Make sure to display the top of the fruit with its wavy green leaves.
Ingredients
- Dressing
- 1/4 cup vanilla Greek yogurt
- 1 lime
- 1 tbs olive oil
- 1 tsp honey
- Fruit
- 2 dragonfruits
- 4 kiwi fruits
Instructions

In a medium bowl, combine the ingredients for the dressing.

Cut the dragonfruits in half across the middle. Save the outsides of one dragonfruit. Scoop out the insides and cut into 1" chunks.

Peel the kiwi fruit. Cut into 1" chunks.

Add the fruit to the dressing bowl and toss. Cover and chill for at least 2 hours.

To serve, stand the dragonfruit on its uncut end (if you have problems standing it, cut the bottom of the dragonfruit shell for an even bottom) on the serving plate. Toss the fruit salad to coat. Scoop into the dragonfruit shell and arrange the remaining salad around the "cauldron."
