Passionfruit guava veggie topping
These two tropical fruits sit on your kitchen counter waiting for you to come home. You walk through the door and inhale their exquisite aromas. How best to enjoy them? I've been known to drop everything for a smoothie, but with a little patience I'll let guava and passionfruit shine on the night's vegetable. Here, this topping is gracing asparagus and fennel.
Ingredients
- Vegetable dish
- 1 lb. fresh asparagus
- 1 bulb fennel
- Tropical topping
- 2 passionfruit
- 2 red guavas
- 1 lime
Instructions

Take off the fennel's feathery leaves and put aside. Slice the fennel into long strips. Put in a microwavable dish.

Cut the woody ends off the asparagus. Add to the microwavable dish. Gently toss. Add 2 tbsp of water. Microwave on high for 2 minutes. Toss and microwave an additional 2 minutes.

Peel the red guavas. Slice in half. Remove the seedy middle, if desired. Chop into small pieces.

Scoop out the insides of the passionfruit. Put in a microwavable bowl and microwave for 20 seconds. Add the guava and the juice of one lime to the bowl and gently toss.

Place the asparagus and fennel on a serving platter. Scoop the guava and passionfruit on top. Serve immediately.
