SlimCado shrimp salad
Add shrimp to a tropical avocado like the SlimCado makes perfect tasting sense. The coconut adds even more of a delish tropical flair.
- 1 SlimCado avocado
- 2 tbs Groovy Coconut, shredded
- 1 tsp olive oil
- 1 lime
- 1/8 cup red onion, chopped
- dash of salt and pepper
- 1/4 cup cucumber, peeled and diced
- 1/2 lb. shrimp, cooked and peeled
- 1/2 cup fresh tomato, diced
- 2 tbs cilantro, chopped
Slice a SlimCado in half. Discard the seed. Scoop out the flesh and mash in a large bowl.
Extract the white coconut from its shell. Shred.
Add the remaining ingredients to the bowl and combine.
Cover and refrigerate for at least 2 hours.
Toss gently before serving on top of lettuce, or slice another SlimCado in half, use it as a bowl and scoop the salad into it.
