Slices of Florida
Avocado, dragonfruit, guava, and passionfruit are all grown in Florida and are highlighted in this salad that's perfect for early fall.
Ingredients
- 2 passionfruit
- 2 limes
- 1/8 cup agave syrup
- 1 dragonfruit
- 1 red guava
- 1 SlimCado® avocado
- 2 tbsp fresh Groovy Coconut, shredded
Instructions
-
Scoop the passionfruit's insides into a small bowl, microwave on medium for 20 seconds (which helps the passionfruit pulp break down enough to combine with other ingredients).
-
In a medium bowl, add the scooped-out passionfruit, juice of 2 limes and agave.
-
Scoop out the dragonfruit's insides and chop into small pieces. Add to the bowl.
-
Peel the red guava. Cut in half and slice into small pieces. Discard the seeds, if desired. Add to the bowl. Gently toss to combine. Refrigerate about 2 hours.
-
Just before serving, cut a small slice off 2 sides of a SlimCado avocado (so the avocado could easily stand on either side). Then slice the avocado lengthwise into 4 slices, 2 thin from the middle and then 2 thicker on the sides. Cut around the seed. Discard the seed. Place each slice onto an individual serving plate.
-
Toss the fruit salad gently one more time. Scoop 1/4 of the fruit salad onto each SlimCado slice. Sprinkle the shredded coconut over the fruit salad. Serve immediately.
