Spicy ham and starfruit pasta topper
Starfruit's sweet-tart taste is a perfect ingredient in a sauce. Toss with pasta for a dinner's main dish or take out the ham and top the evening's catch-of-the-day.
Ingredients
- 2 tbs vegetable oil
- 1 medium red onion, finely chopped
- 1 garlic clove, minced
- 1
- 1 cinnamon stick
- 1/2 tsp cloves
- 1 large red bell pepper, deseeded and chopped
- 1 cucumber, cut into 1/4
- 1/2 cup sugar
- 1/2 cup red wine vinegar
- 2 large Florida starfruit
- 1 tomato, diced
- 8 oz. diced, precooked ham
- 1 tbs capers
- 3 tbs fresh cilantro, chopped
- Salt and pepper to taste

In a large skillet over medium-high heat, add the oil. After 2 to 3 minutes, add the onion, garlic, ginger, cinnamon and cloves, and stir to combine. Cook 5 minutes.

Add the red pepper, cucumber, sugar and vinegar. Cook an additional 5 minutes, stirring occasionally.

With a vegetable peeler, trim the points of the starfruit. Slice into thin slices, discarding the seeds.

Add the starfruit slices, tomato pieces and ham to the skillet. Turn down the heat and simmer 5 minutes. Remove from the heat and discard the cinnamon stick. Add salt and pepper to taste. Then add the capers. Serve warm or cool.

Toss with pasta or don't add the ham for topping grilled fish.
