Starfruit soup
I'm usually enjoying starfruit for its sweet, light, refreshing taste. But I came across this more savory recipe and was intrigued. It wasn't a well-defined recipe, it was more along the lines of "a little of this... and a little of that..." A few changes later and I think it may be our favorite-and maybe yours too-for a cooler-weather treat.
Ingredients
- chicken stock - 4 cups
- chicken drumsticks - 2
- soy sauce - 1 tbs
- salt - 1 tsp
- coriander - 2 tsps
- chipotle pepper - 1/2 tsp
- Florida starfruit - 3 medium
- shallots, chopped - 4 oz.
- plum tomatoes, chopped into small pieces - 2
- limes - 2
Instructions
- Over medium-high heat in a large saucepan, bring the chicken stock to a boil. Add the soy sauce, salt, coriander and pepper. Add the drumsticks and return to a boil. Reduce heat and simmer for 45 minutes (or until cooked through). Remove from heat.
- With tongs, remove the drumsticks from the saucepan. Carefully cut off the meat. Discard the skin and bones. Chop the meat and return it to the saucepan.
- Slice the ends off the starfruit and discard them. Slice into thin stars and remove any seeds.
- Add the starfruit slices, shallots, tomatoes, 1 tsp of lime zest and juice of the 2 limes to the saucepan. Return to a boil. Reduce heat.
- Let simmer 10 minutes.
- Serve warm.
