Tilapia with starfruit and pumpkin seeds
Starfruit has a sweet, refreshing taste that coincides nicely with seafood. The pumpkin seeds add a hint of crunch to this entrée.
Ingredients
- 2 tbs whole unsalted butter
- 2 3-oz. tilapia fillets, thawed
- 1 tsp kosher salt
- 2 tbs pumpkin seeds
- 1 bunch green onions, chopped
- 1 medium Florida starfruit
Instructions

In a large skillet over medium-high heat, melt the butter.

Sprinkle the salt over the fish and add the fish to the skillet.

Cook fish until translucent, then flip and cook until the butter is brown.

Cut off the ends of the starfruit and trim the ribs with a veggie peeler. Cut into 1/4-inch star slices.

Add the pumpkin seeds, green onions and starfruit slices to the skillet. Sauté for 3 to 4 minutes, spooning the starfruit "gravy" over the fish.

Place the fish on a plate and top with the starfruit and pumpkin seeds; alternatively, you can add the starfruit and pumpkin seeds on the side.
