Baked Caribbean Red
After a savory entree, a sweet dessert can be an abrupt change. This is a simple dessert that could be topped with a small scoop of ice cream and enjoyed while the conversation lingers at the dinner table.

Preheat oven to 350°.

Cut the Caribbean Red papaya in half. With a large spoon, scoop out the seeds and any white skin. Discard the seeds and cut the 2 pieces in half again (making 4 pieces total).

In a 9"x12" baking dish, place the papaya quarters skin side down.

In a saucepan, melt the butter. Add the juice of 1 lime and the sugar. Stir until the sugar is dissolved. Drizzle over the papaya quarters.

Cut the remaining lime into slices. Add to the top of the papaya quarters.

Bake for 6 to 8 minutes.

Place the papaya quarters onto a serving platter. Drizzle the baking dish juices over the fruit. Serve immediately with a dollop of yogurt.
