Caribbean breakfast pizza
Perfect for warming up the heart and soul. It's good pizza and it's all about layers, and it's the same for a tropical fruit pizza. Great crust and toppings are made with a Caribbean touch.
Ingredients
- 15 oz ricotta cheese
- 1/2 cup honey
- 1 tsp almond extract
- 1 lime
- 1/2 cup blueberry jam or Caribbean Red papaya jam
- 1 pkg (5) refrigerated biscuits
- 1/4 Caribbean Red papaya, chopped into 1/4
- 1/4 cup Groovy Coconut, shredded
- 1/2 cup granola

Preheat oven to 375°.

Line two cookie sheets with parchment paper.

Separate biscuits, and flatten each biscuit on the cookie sheets to about 6" wide. Bake for 10 to 12 minutes, or until golden brown.

While biscuits are cooking, combine the ricotta cheese, honey, almond extract and the juice of 1 lime in a medium-size bowl.

Remove the biscuits from the oven, and spread the jam over the tops. Top with the ricotta mixture. Then add Caribbean Red papaya pieces and coconut. Top with granola.
