Caribbean date salad
The Caribbean meets Morocco with this easy-to-make date salad.
- 1 cup or approximately 1/4 Caribbean Red® papaya or 1 Solo papaya
- 1/8 cup Groovy Coconut, shredded
- 1 apple, unpeeled and cut into 1/2
- 6 dates, chopped, with seeds removed
- Apple fruit dressing
- 1/4 cup apple juice
- 1 lime for juicing
- 1/8 cup Dijon mustard
- 1 tsp sugar
- salt and pepper to taste
Peel the papaya and discard the seeds. Chop up 1/4 of it. Reserve the remaining papaya for another recipe.
Extract the white coconut from its shell. Shred.
In a large bowl, combine the papaya, coconut and dates. Toss gently.
Add the dressing to the fruit bowl. Toss gently to combine.
Refrigerate at least 2 hours.
To make the dressing, take a small bowl and whisk together all the ingredients. Refrigerate
Toss gently just before serving.
