Caribbean Red piquant salad
This is a fruit salad with a savory taste that nicely complements a beef entrée. Easy and fast gives it potential as a weeknight favorite.
- 1" fresh ginger, minced
- 3 tbs fresh mint, chopped
- 3 limes
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp kosher salt
- 1/2 cup pecans
- 1 Caribbean Red papaya, peeled, seeds discarded and chopped into 1/2" pieces
In a small bowl, combine the ginger, mint, the juice of 3 limes, cumin, coriander and salt.
In a large bowl, add the Caribbean Red papaya and pecans. Pour the contents of the small bowl into the large bowl, toss to combine.
Refrigerate covered for at least 2 hours.
