Eggin on the tropical stars
A fried egg takes on new dimensions when topped with tropical fruit. All you need is a star-shaped cookie cutter and an ounce more effort when breaking the egg into the pan.
Ingredients
- non-fat cooking spray
- 1 egg
- salt and pepper, as desired
- 2 tbs Caribbean Red® papaya, chopped
- 1 slice Florida starfruit
- 1 passionfruit
Instructions

Spray a skillet with cooking spray. Heat the skillet over medium-high heat for 2 to 3 minutes. Hold a star-shaped cookie cutter down in the pan, and break an egg into the center. Hold the cutter down for about 20 seconds or until the egg takes its shape. Cook the egg as desired. Add salt and pepper as desired. Remove the egg to a plate.

Slice a Florida starfruit into one star shape. Add the star-shaped slice to the middle of the egg. Store the remaining starfruit for another dish.

Cut open the passionfruit. Scoop out the inside to top the starfruit and egg.

Add the chopped papaya pieces to the top. Serve immediately.
