Ginger sugared papaya
This could be a dessert, but Caribbean Red® papaya is so nutritious it holds its own as a side dish with any entrée. You can bake papaya with any topping. But once you try passion fruit, you'll add it to other recipes as well.
Ingredients
- Nonfat cooking spray
- 1 inch fresh ginger
- 1 passionfruit
- 2 tbs light brown sugar
- 1 tbs honey
- 2 limes
- 1 Caribbean Red papaya
- 2 tbs sour cream
Instructions

Preheat oven to 450°. Spray nonfat cooking spray on a 10"x13" baking dish.

Peel the ginger. Using a ceramic grater, grate the ginger into small pieces (minced). Add to a small bowl.

Cut the passion fruit in half across the middle. Scoop out the insides and add to the bowl.

Add the ginger, sugar, honey and the juice of one lime to the bowl.

Peel the papaya. Cut off the ends. Cut in half and scoop out and discard the seeds. Cut lengthwise into 1-inch strips. Arrange the papaya strips in the baking dish. Sprinkle the ginger-sugar mixture evenly over the slices.

Bake 30 minutes. Every 10 minutes, spoon the ginger-sugar mixture over the papaya.

Serve warm with lime wedges and a dollop of sour cream.
